Learning How to Smoke Fish

This weekend we learned how to smoke fish. Yesterday I thawed the last three kokanee that we had caught a couple of weeks ago with the guide. Then I cured them overnight in a mixture of salt, pepper, and brown sugar. My new computer controlled wood pellet grill arrived a few days ago, and I spent this morning putting it together and doing the burn in. This afternoon we smoked them up with cherry wood. They were SO delicious! We were surprised at just how yummy they turned out – it’s definitely the best way to cook fish. Thanks so much to my cousin Tammy for coaching me through it all, everything from recommending a grill and wood flavors to teaching me about time vs. temperature. You rock! Now we have to catch more fish!
